Field Kiln Cafe is a restaurant brand built around the wood-fired oven.

We do not limit ourselves to being a bakery, a pizzeria or a restaurant serving other dishes. Wood-fired bread, Napoli pizza and cuisine begin with the same fire, each serving its purpose at different temperatures, times and dining occasions.

We care about more than how to make an individual dish. We consider how an oven works through a day of service, how the food belongs in the space, and how guests enjoy a full meal here.

Field Kiln Cafe currently has one restaurant open to the public.

The restaurant's official name is “Field Kiln Cafe”, at Building 23, Unit 1, No. 3199 West Qingdao Road, Huayang Subdistrict, Tianfu New Area, Chengdu, Sichuan, China. Listed opening hours are 10:30–21:30. Opening days, holiday hours and temporary changes are subject to the restaurant's latest announcements.

This is both a restaurant where guests come to eat and a place where our food is continually tested through real service and customer choices. The website introduces the types of food we make; availability remains subject to the daily menu.

One oven connects three core food categories.

Wood-fired bread

Bread fits into everyday shopping and gives guests a reason to return. It can go home with them or stay on the table as the start of a meal.

Napoli pizza

Pizza puts high heat, an open flame and fresh preparation in view of the guests. It is made for sharing and brings the oven into the dining experience.

Wood-fired cuisine

Meat, seafood and seasonal vegetables take the fire into main dishes. They make a meal more complete, but also need to prove themselves in sourcing, preparation, waste control, service and consistency.

Having an oven is not the same as having an oven-led restaurant.

Beyond the food are the light, the garden, the objects, the seating and the way people greet one another. Gongqiu and Chen Shifu are husband and wife, and run Field Kiln Cafe together. Chen Shifu mainly looks after the oven, the dough and the food; Gongqiu looks after the space, the details and the welcome guests receive. Together, these elements make the experience complete.

Our courses grow out of the work we have done in the restaurant.

Field Kiln Cafe offers an online course series and a 12-day hands-on, in-person course covering ovens, bread, Napoli pizza and wood-fired cuisine. The aim is not for everyone to copy the same restaurant, but to explain what we have practised and documented so that learners can continue testing it in their own setting.
